Ingredients
-2 cups Basmati Rice
-1 teaspoon Salt
-2 tablespoons Vegetable Oil
-1 Onion, diced
-3 cloves Garlic, minced
-1 teaspoon Curry Powder
-1 teaspoon Turmeric Powder
-1 teaspoon Ground Cumin
-1 teaspoon Ground Coriander
-1 cup Carrots, diced
-1 cup Peas
-2 cups Water
-1/2 cup Coconut Milk
-1/2 cup Raisins
-1/2 cup Cashews, chopped
Instructions
- Rinse the Basmati rice in cold water and drain.
- In a large pot, heat the vegetable oil over medium heat then add the onion and garlic. Sauté for about 2 minutes until fragrant.
- Add in the curry powder, turmeric, cumin, and ground coriander. Stir to combine and cook for another minute.
- Add the carrots and peas to the pot and sauté for 2 minutes.
- Add the rinsed Basmati rice to the pot and mix everything together.
- Pour in the water, coconut milk, and raisins. Stir to combine.
- Bring the mixture to a boil, reduce heat to low, cover the pot, and simmer for 10-15 minutes, stirring occasionally.
- Once the rice is cooked, stir in the chopped cashews and fluff the rice with a fork.
- Serve the Pilau hot with your favorite accompaniments.
